Lemon digestive soother iced tea is my summer drink staple. A few years back I made a fresh lemonade and had a revelation by mixing it with my Digestive Soother herbal tea. Since then I have landed on this version. This delicious iced tea is simple and truly soothing with that zing of fresh lemon.

- 6 cups water boiling
- 3 lemons
- 1 tblsp rapadura sugar or honey or unsweetened.
- 1 handful fresh mint
Instructions
- Give the lemons a good wash then cut in half and juice. Set the juice aside.
- Toss the lemon skins into a pot with the degestive soother tea and the rapadura sugar. Now pour the 6 cups of boiling water over the lemon skins and give it a strong stir.
- Add the fresh mint leaves to the jug, leaving a few for garnish. Give the tea another stir and let stand for 10 minutes.
- After 10 minutes strain the tea to remove all the solids then return the tea to the jug and add the lemon juice.
- Serve over ice with a slice of lemon.
- For an ideas water bottle filler, I add half water and half this tea. It is refreshing and helps sooth your gut all day.
