Peanutty Sticky Date Mug Pudding

Sticky date pudding is the perfect dessert on a cold winter night, with its spongy texture and decadent caramel sauce it is a delight to the taste buds. However sticky date pudding is often associated with being high in unhealthy fats and sugars. This version of this irresistibly rich winter favorite is full of all the good stuff with a peanut butter twist. It is like a hug on a plate guaranteed to bring you copious amounts of joy over the chilly months and warm your insides, without the guilty feeling that comes with eating the traditional version.

How to prepare

  1. Place the dates into a small bowl and cover with boiling water (if using baking soda, sprinkle over dates in water). Mix and mash dates in the boiling water, to break apart.
  2. Place the remaining pudding ingredients into a bowl and mix to combine thoroughly. Breaking up any lumps.
  3. Add the dates and soaking water to the other ingredients mixture and stir to combine.
  4. Spoon the mixture into a microwave safe bowl, mug or ramekin, allowing a little room for the mixture to expand.
  5. Microwave mixture in bowl, mug and ramekin for approximately 2 ½ minutes. The pudding should be cooked all the way through and firm to the touch.
  6. Mix coconut cream and raadgura sugar together in microwave safe bowl.
  7. Microwave mixture for 3-3 ½ minutes or until boils and thickens. Taking mixture out every minute to stir and prevent burning.
  8. Then add coconut oil and vanilla extract to mixture and stir until combined together.
  9. Drizzle caramel sauce over pudding and sprinkle with rapadura sugar.
  10. Eat and enjoy.
