Keto Rolls

keto rolls

Over the past years I have had seen a lot of different diets and food ‘treatments’ for a range of health issues. The ketogenic diet, a low carb, high fat diet, originally created long ago, is now being strongly considered for a range of health issues. Find out who can benefit from the ketogenic diet.

Low carbohydrate diets exclude grain breads and sugars. I find it hard to live without bread. Lunch of just a simple salad just does not cut it for me. It leaves me feeling like I have missed out. I love a sandwich that get me through the afternoon or a juicy hamburger loaded with fried onions and salad.

Here is a bread that tastes great, has a traditional bread texture and is extremely low in carbs. Now you do not have to miss out on bread when you start on a ketogenic diet.

I prefer to use all whole nuts and seeds and freshly grid myself. Whole nuts and seeds keep well in the cupboard where as ground nuts and seeds will oxidise in just a week or two. The healthy oils will easily become rancid and inedible. kept bread ingredients Psyllium Husks are a great fibre, but beware that the whole husks can be harsh in the gut as they are indigestible and pass through your body. Always grid then to a finer texture so they are gentle on your body. Kitchen_aid_mixerEggs are a great source of protein and nutrients and in cooking are often used as just the white to the yolk. Never throw out the portion of the egg you do not use. In this recipe we have a 6 of egg yolks left over. I will use these to make recipes such as a Rich Cesare Salad (I use these Keto Rolls for the Keto Croutons). Try making some creamy mayonnaise or Hollandaise Sauce. Even try a lemon curd.

  • 120  g Almond, Raw
  • 120  g Omega Energy Mix, Whole Power Seeds
  • 50  g Psyllium Husks
  • 70  g Coconut Flour
  • 11/2  tsp Garlic Powder
  • 11/2  tsp Onion Powder
  • 1  tsp Salt, Fine Pink Himalayan
  • 4  tbsp (30g) Omega Energy Mix, Whole Power Seeds
  • 4  tsp Baking Powder
  • 6  whole Egg White
  • 2  whole Egg
  • 21/2  cup Water
  • 3  tbsp Apple Cider Vinegar (with Mother)

How to prepare

  1. Prepare all ingredients before you start to assemble this recipe. Grind any whole ingredient to a fine meal/flour. I use whole nuts and seeds and grind them fresh every time. It is simple and gives a healthier result. Preparation also makes the whole process easy and enjoyable. Follow weights here as the cup measures can vary depending on the size of the ingredients.

  2. Mix all dry ingredients together in a large mixing bowl. Mix together very well.

  3. Boil the water. Set aside. Beat together all the eggs and vinegar. Pour into the dry mix. Beat with a mixer until well combines. Slowly add the hot water and continue beating for about 3 to 5 minutes. The batter will thicken as water is absorbed into the psyllium and ground seeds.

  4. Place sheets of baking paper onto 2 baking/biscuit trays. Spoon 6 even portions onto each tray. Leave a space between each portion so they can grow. Sprinkle with the remaining 3 tablespoons of Omega Power Seeds and very lightly press into the dough. Place the trays into the oven and bake for 45 to 50 minutes or until the Keto Rolls are a golden colour.

  5. Remove from the oven and allow to cool totally before eating. Keep the rolls you think you will use in the next day or two and freeze what remains. They freeze well so make plenty and thaw as you need. Just reheat in the oven for 10 minutes for a beautiful fresh feel.
