Citrus spiced toasted muesli bars are a really quick and simple way to take you muesli on the go or for the kids for a school or afternoon snack. My mum made these for us kid so we could eat a healthy snack instead of junk food. I love that touch of zest, honey and the nutty muesli.
I love to use a healthy nutty toasted muesli for the added protein and healthy fats from the nuts. These muesli bars are incredible easy to make. I grab a big mixing bowl for the dry ingredients and a jug for the wet ingredients.
I take six serves of Eclipse Organics Toasted Nut Honey Chia Muesli and create 18 moorish muesli bars. I grab a couple fo there when I need to rush out and need breakfast on the go. But my favourite time to enjoy these citrus spices toasted muesli bars is for a healthy morning or afternoon snack at work. Love them.

Citrus Spiced Toasted Muesli Bars
Ingredients
- 3 cups toasted muesli
- 1/2 cup plain unbleached flour
- 1 tsp mixed spice
- 1/3 cup butter
- 1/3 cup honey or Maple Syrup
- 1 egg
- 1 tsp orange zest
- 1 tsp lemon zest
Instructions
- Preheat the oven to 170°C. Line a baking tray with baking paper.
- Combine the muesli, flour and spice into a bowl. In a separte bowl, whisk together the butter, honey, egg and zest.
- Add the butter mixture to the muesli mixture and mix well. Rest for 15 minutes for for the muesli to soften slightly. Press the mixture into the lined baking tray to about 1½ cm thick.
- Bake for 12-15 minutes then remove and allow to cook for 10 minutest before cutting into bars.
