Classic Pesto

I was out in our backyard throwing a ball with Olly, my German Short Haired Pointer, when I saw that a bunch of basil was nearing the end of it best days. It was now or never. I pulled up the basil plant with one simple things in mind. Pesto. What better to do with a generous bunch of basil. Pesto; So simple, so quick, so perfect.

  • 60  g Pine Nuts
  • 60  g Parmesan Cheese
  • 2  clove Garlic, raw
  • 90  g Basil, Raw
  • 170  ml Olive Oil, Cold Pressed
  • 1/8  tsp Salt, Fine Pink Himalayan
  • 1/8  tsp Pepper, Course Black

How to prepare

  1. Dry toast Pine Nuts in a frying pan on a hot heat until golden brown (about 5 minutes)

  2. Roughly chop parmesan and add it to a food processor with all other ingredients. Process until all well broken down to a rough texture.

  3. Use for pasta, on chicken or for a delicious dip at a BBQ.
